ALOO BONDA (ALA BOLA)

Ingredients for Step 1 (Mixture)500 g potatoes
4 dried red chillies
1 tspn mustard seeds
Salt to taste
1 sprig curry leaves
8 small red onions
3-4 green chillies
1/2 tspn turmeric powder
Water if needed
2 tbspn coconut oil or cooking oil
cooking oil for deep frying
Chutney for serving separately

Step 1:

Boil potato pieces and crush them. Add coconut oil into a frying pan, when heated add mustard seeds, curry leaves, sliced red onions, chopped green chillies and dried red chillies and temper them.
Now add potato mix, salt to taste and add little water if necessary for binding. Make smooth round shaped balls.

Do not add a lot of water when grinding or else the dough will not stick together.

Ingredients for Step 2 (Batter)

1 cup gram flour(chick pea flour)
1/2 cup urad flour(ulundu)
1/4 cup wheat flour
1/2 tspn cumin powder
1/2 tspn turmeric powder
yellow coloring as needed
1/2 tspn baking powder

Step 2:

Add all the above ingredients together with � � � cup water and make a thick batter. The consistency of the batter should be medium thick.

Step 3:

Heat oil in a deep and wide pan. When the oil becomes really hot, reduce the flame to low-medium. Dip the poatato balls in the batter and fry in the hot oil.
Flip the balls after a min or two. Fry it till it becomes golden brown in colour.
Serve hot with tomato ketchup and chutney.
